Do you have an oven, basic baking supplies, and access to bananas? If so, try banana bread. I highly recommend asking someone with a meal plan to get you a supply of bananas. Once that is acquired, you can make banana bread whenever you want. Of course, you need the rest of the ingredients, but bananas are useful for so many things. For example, roasted bananas, fritters, toppings for oatmeal, and smoothies. I personally favor bread, so here is the recipe I use for banana bread.

 

Banana Bread Recipe

Makes 2 Loaves

 

2 Cups flour

1 tsp salt

2 tsp baking soda

½ tsp cinnamon

¼ tsp nutmeg

1 cup (2 sticks) softened butter

1 cup brown sugar

½ cup white sugar

¼ tsp vanilla

5-6 roughly mashed overripe bananas

4 eggs

 

  1. Sift together dry ingredients
  2. Cream butter and sugar then beat in eggs and vanilla. Stir in bananas
  3. Combine dry into wet ingredients
  4. Pour into 2 loaf pans and bake at 350 F for 50 minutes or until the toothpick comes out clean
