As a college student, it can be hard to bake from scratch due to limited tools, money, and time. Thus, when I came upon Hawaiian Butter Mochi I was very interested. As a preface, buying mochiko is difficult in Boston. The only place that sells it is at H-mart, the Targets in the area do not even sell it if you order it online. Anyways, all you have to do is combine the wet ingredients with the dry ingredients then bake. Hand whisking will not take forever to do, and you can make so much at one time for a party, event, or even just for yourself. The contrasting mochi-like bounce versus the crunchier coconut flake topping and salt helps contrast the sweetness and balances out the dessert.
