Chili Oil Noodles Recipe: The Budget Chinese Version of “Butter Noodles”

Some people may have grown up on butter noodles, the classic easy-to-make dish that requires minimal preparation and ingredients, but being raised in a Chinese household my mother had a spicier alternative. We had chili oil noodles. This dish requires only a few ingredients and takes only a couple of minutes to recreate. With its cheap and simple ingredients, this recipe is the perfect dish for a college student to make.

For 1 serving:

Any wheat Chinese noodle or angel hair spaghetti
2 tablespoons of Lao Gan Ma Spicy Chili Crisp- a must-have in this recipe
1 tablespoon of dark soy sauce
3 tablespoons of a neutral-flavored vegetable oil- canola, corn, or vegetable
2-3 teaspoons of black vinegar- a more aromatic, smokier, and flavorful vinegar used in many Chinese dishes
1 stalk of green onions cut into one-inch strips.
1 teaspoon of sugar
Salt to taste


First heat oil in a pot over medium-low heat. Sauteed the green onions for 30 seconds. Turn off the heat and pour in soy sauce, the spicy chili crisps, sugar, vinegar, salt, and stir to combine. Boil the noodles in a pot of water to your preference. Drain the noodles, add sauce to your liking and enjoy! This sauce can also be used for other purposes such as a dipping sauce for dumplings, dressing, or sauteed with vegetables.
