Beef Chow Fun

I did not realize how much I would miss food from home until I went back to NYC for winter break.

Today, I want to share with you a dish that I personally enjoy making and eating – a dish that my grandpa taught me how to make.

Beef Chow Fun! This amazing dish originated in Guangdong, China (where you will find so many other amazing dishes). My grandma taught me the saying: “穿上海,吃广东,” which translates to “Wear Shanghai, Eat Guangdong.”

You will need…
Main Ingredients

  • 1 lb flat rice noodles
  • 10 oz flank steak
  • Scallions (include stem, amount to your preference)
  • ½ yellow onion
  • A handful of bean sprouts
  • 1 tbsp cooking oil

Beef Marinade

  • 1 tbsp cornstarch
  • 1 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp cooking wine (optional)
  • 0.25 tsp white pepper
  • 2 tbsp water
  • Chow Fun Sauce
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil

Directions

  1. Cut the flank steak into even ¼ inch slices (Freezing and letting it thaw a little before cutting makes it easier to cut).
  2. Cut the onion into ¼ inch thick slices.
  3. Cut the scallions into 1 inch long pieces.
  4. Mix the ingredients for Beef Marinade in a bowl.
  5. If your rice noodles are not pre-cut, cut them into ½ thick slices and massage them to loosen pieces that are stuck together.
  6. Microwave shortly if it feels too firm.
  7. Mix the ingredients for Chow Fun Sauce in a bowl.
  8. Add 3 tbsp of cooking oil to the hot pan or wok and stir fry the marinated beef for about a minute and set it aside (cooking process will be finished later when added to the noodles).
  9. Add some more oil and stir fry the onions for about 30 seconds.
  10. Add the rice noodles and cook until golden brown.
  11. Add the chow fun sauce and cook for another minute.
  12. Add scallions and bean sprouts and cook for 40 seconds.
  13. Add back the beef and stir fry for another minute.
  14. Plate!

Serve and enjoy!
