The Perfect Sweet Potato Fries!

A recent trip to the farmer’s market led to my family bringing home produce boxes with 6 massive sweet potatoes. I have never been a fan of sweet potatoes, but it all changed when a friend introduced me to sweet potato sushi rolls (I highly recommend!!). As the only one in my family who enjoys sweet potatoes, and with no idea on what to do with such a large portion of sweet potatoes, I turned to the classic: sweet potato fries.

Whether it be too soggy or too chewy, sweet potato fries have always been a hit or miss in my kitchen. After trial after trial, I have finally found the perfect, no-fail sweet potato recipe! Sweet potatoes have more sugar than normal potatoes and I found that adding starches made all the difference in getting the crispy edges we all love on fries. I recently learned that boiling homemade fries before baking helps you achieve the best result, and out of air frying, baking, boiling, and frying, I found that the boil + air fry combo works the best! The fries came out extra crispy, while staying fluffy in the center. Here’s the recipe!

Ingredients

  1. 2 cups sweet potatoes
  2. 3-4 cups water
  3. 1/3 cup corn starch
  4. A drizzle of olive oil
  5. Seasoning of choice- I used garlic powder, smoked paprika, salt and pepper

Instructions

  1. Boil 3-4 cups of water and add salt.
  2. Preheat your oven/air fryer to 400 F.
  3. Wash, peel and cut your sweet potatoes into thin strips (about 1/4-1/3 inches thick).
    1. It’s important to make sure they’re all uniform or they won’t cook evenly!!
  4. Once the water has come to a boil, add all the raw fries and boil for 6-7 minutes.
  5. Strain your fries and gently pat them dry with a towel or cloth. Once they are mostly dry to the touch, toss into a bowl with your cornstarch and seasoning mix.
  6. Drizzle a small amount of oil on the fries as well to help them crisp on the edges and avoid sticking to the surface.
  7. Bake for 15-17 minutes and shake the fries up every few minutes. Add a pinch of salt immediately once removed & enjoy 🙂
