Meal Prepping over the Summer

BbibimbapAs someone who loves food and cooking, learning how to meal prep has been really difficult to get used to. Eating the same dish everyday sounded like a nightmare to me at first but I realize that I could just meal prep for my lunches and then for dinner, I can just cook something different or eat out. I always have a snack with my lunches so I usually swap those to make my lunches less boring. Costco is god-sent gift for meal prepping. All you need is protein, a giant bag of frozen mixed veggies and some kind of snack (I love mixed nuts). Sometimes I’ll make something special like bibimbap for the first week of summer classes.

Meal prepping helped me keep myself accountable and learn to keep better track of all the ingredients I have. I save time through the weekdays by not worrying about what to eat and spend at max 2 hours to meal prep in the weekend.
