I was always used to the home cooking of my mom during my semester at home last semester. This meant that I didn’t have to try hard to feed myself while I worked on my classwork. However, I do not have this privilege this semester as I am on campus. I’ve cooked and baked before, but I have never tackled cooking meat and fish products. So if my roommate isn’t cooking for the both of us, I would resort to a vegetarian diet. Luckily, I know how to cook tofu and eggs, which helps a lot with my daily protein intake. Here are some of my favorite spring semester dishes (which will include a lot of fried tofu because that’s the only thing I know how to cook well, to be honest).
- Fried tofu with Korean gochujang and soy sauce
- Sweet chili paste chicken-flavored ramen with over-easy eggs and sesame oil
- Scallion pancakes, but instead of scallions they were green onions (probably the same thing?)
- Pillsbury biscuit but fried under vegetable oil and coated in cinnamon and sugar to make mini donuts.
- Asian pork dumplings with Pillsbury biscuits, but instead of pork, it’s fried tofu marinated in gochujang or sweet chili paste
- Scrambled eggs with green onions, mushrooms, and bell peppers with pork bacon on the side (I usually avoid eating bacon frequently though)
- Rice with curry powder or turmeric
