Peach Cobbler Recipe

Known as the season of harvest, fall is the prime time to enjoy pumpkin and apple flavored treats. With some of my friends around me going apple/pumpkin picking and others obsessing over the annual release of Trader Joe’s pumpkin and pumpkin spice flavored desserts, I on the other hand don’t particularly enjoy the typical pumpkin or apple flavored foods. Don’t get me wrong, I love fall. It’s one of my favorite seasons after spring, especially right now as the weather becomes cooler and the leaves turning into the purple shades of orange and red, it’s the perfect time to bring out the cozy sweaters and wrap yourself up in a blanket while reading a book. But I could never get myself to enjoy your typical fall themed foods that are usually pumpkin or apple flavored. I recall the first time I tried a pumpkin spice latte from Starbucks back in middle school (when it was all the hype), I remember it tasting like cough medicine. I only took two sips before deciding that it was enough and tossed it away in a trash can right outside of my local Starbucks. Looking back, maybe that experience was the reason why I don’t particularly enjoy many pumpkin flavored treats, but I digress.

But like I said before, because fall is the prime time to enjoy pumpkin and apple flavored desserts, many stores just don’t have many snacks or desserts that don’t have a fall theme packaging. This is why my roommates and I decided to make a peach cobbler last weekend. Typically known as a late-summertime dessert, a peach cobbler is the best if you don’t like your typical pumpkin spiced or apple flavored fall desserts, but still crave that sense of fall coziness. In this blog I would like to share a really simple peach cobbler recipe I found that made a few adjustments to. It takes no time to make and it doesn’t require many ingredients. It’s the perfect dessert to make for a movie or game night with your roommates. Here is the recipe:

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 2 cups sugar, divided (I used 1½ cups and it was the perfect amount of sweetness)
  • 1 tablespoon baking powder
  • pinch of salt
  • 1 cup milk (I used lactaid milk because my poor roommate is lactose intolerant :/)
  • 4 cups fresh peach slices (around 4-5 medium size peaches)
  • 1 tablespoon lemon juice (I used lime juice from the half a lime leftover in the fridge because we didn’t want to spend 30¢ on a single lemon)
  • ground cinnamon

Procedure

  1. Preheat oven to 375°F (190°C)
  2. Melt the butter in a microwave and place it in a 13×9 baking dish (or any size you have).
  3. In a mixing bowl, combine flour, half the sugar, baking powder, salt, and milk. Mix until the dry ingredients are moistened and well incorporated with the wet ingredients. Pour the batter into the baking dish with the butter already in it. DO NOT STIR.
  4. To a pot, add the rest of the sugar, peach slices, and lemon juice to a boil over high heat and stir constantly. Reduce the heat to medium and let the mixture simmer for around 5 minutes. Remove from heat.
  5. Carefully pour the peach and sugar mixture into the baking dish and spread it out as evenly as possible. Again, DO NOT STIR. Sprinkle with a bit of cinnamon
  6. Bake at 375°F (190°C) for 40 to 45 minutes or until golden brown.

With these 6 easy steps, you will get a delicious peach cobbler in no time! You can serve it warm or cool but my roommates prefer to serve it hot with a scoop of vanilla ice cream. This is definitely the perfect fall dessert. The night we made it, we watched Hocus Pocus, a classic Halloween movie, and ate a few scoops of the peach cobbler along with it. This recipe is definitely going to remade over and over again in our apartment and I hope you guys can enjoy it as much as I do!
