High-Protein Quesadillas

One of my favorite recipes that I recently discovered that can help anyone reach their protein goal for the day is high-protein low-calorie quesadillas. I thought I would share this delicious and healthy recipe with all of you today.
Ingredients:
– One serving 90% lean ground beef (112g): 200 calories / 22 g protein
– Spices: salt, pepper, cumin, paprika, garam masala
– One spinach tortilla from Fiber One: 70 calories / 6 g protein
– ½ tomato (55-60g): 40-45 calories / 0 g protein
– Two servings of shredded fat free mozzarella cheese (58 g): 90 calories / 18 g protein
– Non-stick canola oil spray: 0 calories / 0 g protein
– However much sriracha or no-calorie hot sauce you want
Steps:
1. Set your stove to medium-high. When the pan is hot, add non-stick canola oil spray.
2. Mix your ground beef and spices in a large bowl while the non-stick oil heats up. Add the beef to your pan when the oil is hot.
3. Cook ground beef until brown (the calories shown above is with all the fat kept in, so if you render most of the fat out, it would be less).
4. While the ground beef is cooking, dice your ½ tomato into small cubes.
5. Place the cooked ground beef in a separate bowl and wash the pan. Re-apply non-stick and place your spinach tortilla in the pan once the oil is hot.
6. Place your fat-free mozzarella cheese on one side of the tortilla. When the bottom of the cheese visibly melts, add your ground beef and diced tomatoes on the same side as the cheese. Add as much sriracha or hot sauce you want.
7. Flip the the unused side of the tortilla over the condiments. Use a flat plastic spatula to feel the bottom of the quesadilla. When you can hear an audible “crunch”, flip the quesadilla with the “open” side facing the inside of the spatula (so nothing spills out). Cook until the other side is crunchy as well.
8. Place the cooked quesadilla onto a large plate. Cut the quesadilla into three triangles using one point from the middle, and enjoy!
