During the weekend, my friends and I baked Hidamari’s no-bake strawberry cheesecake recipe for one of our friend’s birthday. The cake itself took 3 days to complete, partially because I got lazy and didn’t feel like working on it on the second day. For starters, it tasted amazing. However, due to lack of brain cells from all around, we ended up putting all of the strawberry puree we made into the cheese cake filling which made it extremely liquid-y. We thought that freezing the cake for 2 days would fix this, but it did not. Therefore, the cake collapsed on itself once we took it out of the mold. 10/10 recommend!

Rare cheesecake
100g biscuit, 30g melted butter, 200g cream cheese, 90g sour cream, 30g sugar, 30g milk, 6g gelatin, 80g strawberry puree, 200ml heavy cream, 15g sugar
Strawberry puree
220g strawberries, 30g sugar, 10g lemon juice,
Strawberry jelly
150g strawberry puree, 35g water, 5g gelatin
Lemon jelly
200g water, 10g lemon juice, 40g sugar, 7g gelatin, strawberries
