Baby Steps into the Culinary World

Cooking has never come easy to me. I fear the angry hiss of the oil, have yet to master the delicate art of mincing vegetables, and have a tendency to follow the recipe meticulously— Oh how the wonderful smell of smoke rising out of the pan tingles my olfactory receptors as I reread the sixth step for the third time! But give up, I will not! For there are many delicious meals that don’t require oily dangers at all!

Here are my two favorite meals that are perfect for sharing among your friends as well!

Pesto Chicken Sandwich (Makes 1 Sandwich)

Ingredients:

  • 2 slices of sourdough bread
  • Handful of assorted greens (arugula, spinach, etc)
  • Pre-grilled chicken breast cut into cubes
  • 2 slices of cheddar cheese (or any cheese you want)
  • 2-3 spoonfuls of basil pesto (store bought)
  • Optional fun additions: bacon and “everything but the bagel” seasoning (trader joe’s)

Instructions:

  • In a small oven or air fryer, place the slices of bread inside and layer the cheese on each slice.
  • Place the pieces of chicken on top of the cheese on only one of the bread slices.
  • Start the oven/air fryer at 350° F for 5 minutes or till cheese has melted
  • Take out the slices and place on to a plate
  • Use a spoon to spread the pesto on top of the chicken
  • (Sprinkle “everything but the bagel” seasoning and add bacon at this step)
  • Add your handful of greens
  • Place the other slice of bread on top
  • Cut the sandwich in half with a knife and you’re done!

Curry Chicken and Potatoes (Makes 6 servings for 6 people or 1 person over a week)

Ingredients:

  • 5-6 potatoes
  • 2-3 chicken breasts
  • 4-7 cubes of the Golden Curry S&B brand ready made sauce (mild or spicy flavor is fine)
  • 1 tsp of salt, pepper, garlic powder (or measure with your heart! Adjust to your liking)
  • 2 tsp of pure curry powder (or measure with your heart! Adjust to your liking)
  • Half a can of coconut milk

Instructions:

  • Peel your potatoes and leave them submerged in water overnight, preferably in the fridge
  • The next day, chop the potatoes into one inch cubes
  • Chop your chicken breast into one inch cubes (or roughly the same size as the potato cubes)
  • In a large pot, fill up with water until about half of the pot (pot should be around the size of a watermelon/slightly smaller, but not any bigger for reference)
  • Set the burner to low/medium heat and put in the chicken and potatoes
  • Let it simmer for a 5 minutes and then add in all the seasonings + coconut milk
  • Stir and let simmer for 15-20 more minutes
    • When the mixture has thickened, taste test and add additional seasoning if desired
  • Turn off the heat and enjoy with rice or naan!
