I had the opportunity to obtain a pint of apple cider, so I decided to try making apple cider snickerdoodle cookies. To start out with, I found a recipe online then proceeded to alter some of the measurements due to comments on the dessert. As one baker stated the apple cider flavor was lacking, I doubled the amount of apple cider I concentrated into a syrup. I also saw that the sugar coating used 3 teaspoons of cinnamon which I felt would weaken the apple cider flavor, so I instead used 1 ¾ teaspoon. Unfortunately, after baking the cookies I found that I still could not taste the apple cider. I am not sure if I have poor tastebuds, or the recipe was faulty. I am still happy to have a large batch of delicious snickerdoodle cookies, but I was hoping to have something a little more special. Now I have to figure out what to do with the dough as the recipe says it makes 72 cookies.
