Summer Eats: Korean Cold Noodles

Cold Noodles

With the temperature being off the charts for the past few days and many days looking forward, I’d recommend everyone to go out and try Korean cold noodles (naengmyun). I grew up eating this every summer and it hits the spot every time. They sell it in most Korean restaurants or you can buy it at HMart. My family has a tradition of eating cold noodles as dessert after kbbq.

It’s made up of buckwheat noodles in cold beef broth, topped with sliced cucumbers, boiled egg, beef briskets and sesame seeds. I like to add some vinegar to the broth or some sweet gochujang base sauce for some spice.
