A meal that always reminds me of home is Nasi lemak made by my mom. It’s a Malay dish that essentially consists of coconut milk rice with sides of sambal, sliced cucumbers, roasted peanuts, eggs, and anchovies. I haven’t had this dish in a while but I’m hoping my mom makes it again when I go back home in August!
